Counting Down to Christmas

As part of our Count Down to Christmas, last night we set a “fancy” table up for dinner.

Instead of our usual plain, boring table (sometimes complete with paper plates) we pulled out the table cloth, plate chargers, candles & centerpiece.

The girls were responsible for setting the table up & making place cards for each of us, while I cooked supper.

Sarah’s “big” job was decorating the candle holders (which were just upside down dessert bowls) she wrapped & twisted (as she describes) pine from the Christmas Tree around the tops to make them “pretty”

Blackened Chicken Alfredo

Generously sprinkle both sides of chicken breast or tenders with Zatarains Blackened Seasoning
Add to pan, cook until done (I use a bit of oil in the bottom)

While chicken is cooking start Fettuccine (according to package)

While that’s cooking start cooking Alfredo sauce

1/4 cup butter
1 clove garlic
1 1/4 cups heavy cream (call for half & half but that just seems wrong ha!)
3/4 cup grated Parmesan cheese
1/4 tsp pepper

In large skillet melt butter over med heat, add garlic, sauté 1 minute
Stir in 3/4 cup of heavy cream
Stir constantly over med heat for 2-3 minutes
Add cooked & drained Fettuccine
Stir in remaining heavy cream, cheese & pepper, cook 1 minute

You can either add chicken while on stove or wait and top pasta once you are ready to eat.
Also, I always let the mixture sit in the pan awhile to make sure the cheese is melted, and the sauce is good and hot.

Now, I will always be able to find this recipe. And not have to look through my recipe box or stacks & stacks of recipes to find.

They Cook Too

cookie collage From the time Emily and Audrey were very young, they wanted to be in the kitchen. They wanted to be right there, by my side, helping. And unfortunately for them, I’d send them on their not-so-merry way. I like to be alone in the kitchen. I make enough mistakes on my own and to add two fighting youngsters to the mix, would be bad. Plus, our kitchen at the old house was teeny tiny.

But now that we have moved, I let them go at it. They pretty much fix their own breakfast and lunches, now granted it’s not all that fancy of a meal, but still, they do it, and I don’t.

In the kitchen, and pretty much every other area of my life, I do things my way, I don’t give it a lot of thought, if it turns out it turns out. If not, it winds up in the trashcan next to the Lemon Cake I made for Mother’s Day. So, I pretty much just throw the girls in the kitchen with a recipe or instructions, if they need help, they know where to find me.

And their particular instructions on this day was to make a batch of chocolate chip cookies, together, no fighting allowed, if they did choose to fight, they would not be allowed back in the kitchen. And since two eggs needed to be cracked, you each get a turn. {for those of you wondering, yes, i have finally let them crack eggs}

After taking a few quick pictures, Sarah and I headed downstairs to relax. That was my intent anyway, Sarah had other plans that included glue & markers.

They did a great job. The cookies were wonderful. I ate way too many, as usual.

Oh, incase you are wondering, I’m in charge of the stove. I don’t want to have to take any trips to the ER because of burns, or have the Fire Department come out because the stove caught on fire.

The Ultimate Chocolate Chip Cookie (taken off the back of Ghirardelli Chocolate Chips)

  • 11 1/2 ounce(s) 60% Cacao Bittersweet Chocolate Chips
  • 2 1/4 cup(s) unsifted flour
  • 1 teaspoon(s) baking soda
  • 1/2 teaspoon(s) teaspoon salt
  • 1 cup(s) (2 sticks) butter
  • 3/4 cup(s) sugar
  • 3/4 cup(s) packed brown sugar
  • 2 eggs
  • 2 teaspoon(s) vanilla
  • 1 cup(s) chopped walnuts or pecans (optional)

Directions
Preheat oven to 375ºF. Stir flour with baking soda and salt; set aside. In large mixer bowl, cream butter with sugar, brown sugar, eggs, and vanilla. Gradually blend dry mixture into creamed mixture. Stir in nuts and chocolate chips. Drop 1 tablespoon of dough per cookie onto ungreased cookie sheets.

Bake at 375ºF for 9 to 11 minutes or until golden brown.

I tumbled this yummy goodness as soon as I ran across the recipe.

Ohmyword. It is yummy!

I was hoping that it would taste more like the peanut butter Twix bar {since its my favorite and I can’t find it anywhere} but it tasted more like the original. I’m thinking too, if you add a couple chopped pretzels it will have more of a Take Five taste to it.

Twix Bar Recipe

Put a layer of Club Crackers in a 13 x 9 pan aprox. 24

In a saucepan on the stove, combine…

  • 1 cup graham crackers, crushed
  • 3/4 cup brown sugar
  • 1/3 cup sugar
  • 1/3 cup milk
  • 1 stick of butter

Bring to a boil, continue to stir and boil for about 5 minutes
Pour over the crackers

Top with another layer of Club Crackers

Chill about 30 minutes

Icing

  • 2/3 cup peanut butter
  • 1 cup. chocolate chips

combine peanut butter and chocolate chips, melt in microwave for 2 minutes

stir well and pour over crackers, spreading evenly

cool completely before cutting
