‘Cause I love me some potato soup.
Baked Potato Soup
Bake a handful of potatoes ( i throw about 6 in the microwave)
Cool & peel
Melt 2/3 cup of butter then add 2/3 cup of flour & mix together
Salt & pepper to taste (I leave out the salt & it tastes fine)
Stir in 6 cups of milk
Bring to a boil & cook for 2 minutes
Remove from heat & whisk in 1 cup of sour cream
Add potatoes
Serve with crumbled bacon, shredded cheese & green onion.
I love the cooler weather, mainly because of all the warm, delicious, comfort meals that come along with it.

My DH came home a couple weeks ago with ’sale’ potatoes.. I was thinking of all kinds of things to do with potatoes.. don’t know if potato soup freezes all that well though..
