Tasty Tuesday

For my first Tasty Tuesday, I’d like to share my recipe for corn salsa. We enjoy eating this as a side dish (with tortilla chips) when I fix Mexican, sandwiches or burgers.

Corn Salsa

2 cans fiesta corn

1 small can chopped green chilies

1 1/2 block of Pepper Jack cheese (cubed or shredded) 

1/4 cup of mayo

4 oz cream cheese

Mix together in shallow dish

Bake @ 350 for 25 – 30 min

Let sit about 10 minutes before serving.
