What’s for Dinner?

Tonight we are having baked potato soup. It is wonderful! I have tried several potato soup recipes and this is by far the best. I wish I would have thought ahead of time to bake some yummy bread for our sandwiches.

 Baked Potato Soup

Bake a handful of baking potatoes (6 or so). Bake at 350 for 65-75 minutes. (I cooked mine in the microwave and it turned out fine)

cool, peel & cube
Melt 2/3 cup of butter and add 2/3 cup of flour, salt & pepper
Gradually stir in 6 cups of milk
Bring to a boil and cook and sir for 2 minutes more
Remove from heat. Whisk in 1 cup of sour cream.
Add potatoes and green onions diced up. Garnish with bacon & cheese.

btw ~ I was reading over this and by baking bread, I mean the frozen kind you buy at the grocery store =P

Can you believe it is almost November?!? My goodness, where has the time gone? We had a pretty nice weekend. We were not too busy which was a real blessing. I feel like all I have done for the past month or so is run. This is the first week in a while where we will be home most of the week. We always have to run out on Mondays and Wednesday for piano, home school meeting & Emily’s Lego team meeting.

 

 

Our homeschool group had a Fall Festival today. The girls have been really excited about this since they announced it. Emily went as a soccer player & Audrey went as Cinderella. We did not dress Sarah up this year because she would have just taken her costume off! All of the children that dressed up were adorable. One little girl was Madam Blueberry from Veggie Tales. She was the cutest little thing. My only problem with the whole party is one of the older boys dressed up as a p*mp! Can you believe it?!? I was shocked. Emily and Audrey had no idea what he was and I am so glad that they did not ask. I’m also glad they stayed away from him. This is first meeting that he has been to, so I think he was just a friend of one of the other boys.

 

 

I still have not started working on Sarah’s dress. The other day I was going to cut out the pattern but I did not know where to start. I have heard several times that sewing is easy once you get the hang of it ~ I’ll never find out if I’m to chicken to ever start. I’ll try again later in the week because Tuesday & Wednesday are going to be very busy around here.

 

When I went to the grocery store this weekend I stocked up on Antibacterial wipes and hand sanitizer. Leah had this article posted on her blog last week and I have just not been able to get it off my mind. Especially Saturday when I went to put Sarah in the cart, or as I like to call it, the buggy ~ David always corrects me when I say that! I thought about buying a couple of these neat little things but knowing how forgetful I am I’d leave it one the silly cart. It looks like it would be easy to make one out of fabric. Just cut fabric the length of the handle and add a little Velcro and too you could just throw it in the wash to clean it.
